Beergaritas

It would be lovely if we all had endless supplies of margaritas made from fresh-squeezed lime juice, agave syrup and premium tequila, rimmed with a fancy artisanal salt blend and garnished with a sliver of orange peel. But sometimes, you just need a bunch of margaritas, stat.

Maybe you’re having a party… or maybe it’s just Taco Tuesday. In either case, I would highly suggest you stir together some limeade concentrate, tequila, orange liquer (or even a splash of orange juice, if you happen to run out of Cointreau at an inopportune moment) and Mexican beer. It might sound sort of terrible and borderline redneck, but I promise it is quite delicious, tart, and — as long as you don’t use a dark beer — not even a tiny bit beer-y. And it’s great for a crowd, because we all know that if you’re squeezing enough limes for several pitchers of margaritas, you’re probably not enjoying your guests.

Once you’ve added the beer, please don’t put it in the blender, because beer + blender = fizzy margarita explosion in your kitchen. Just stir it up, pour it over some ice, close your eyes and pretend you’re on the beach in Mexico. You can even rim your glass with pink Himalayan salt, if it makes you feel fancier. It’s your margarita, after all.

Beergaritas (Makes 8, adapted slightly from Southern Living)
2 cups (about 1 can) frozen limeade concentrate, thawed
2 cups tequila (I recommed sticking with a kind that says 100% agave on the bottle)
1 cup orange liqueur (or a combination of orange liqueur and orange juice)
1 cup or more Mexican beer (I used Corona)
Lots of ice
Salt and lime wedges, for garnish

Stir the limeade, tequila, orange liqueur and 1 cup beer together, then taste. Add more beer if desired. Pour the mixture into a pitcher of ice, or prepare margarita glasses with garnish and ice and pour the mixture directly into the glasses. Enjoy!
