Peach and blueberry yogurt parfait

I really like the idea of yogurt parfaits, but it seems like the pre-made ones always have some kind of yucky yogurt and not enough fruit. So I thought I’d make my own.

I only have plain, nonfat Greek yogurt in my fridge. And I simply am not a good enough person to eat that plain. So I added two tablespoons of honey, which made a huge difference. And Runner’s World says honey is good for you. Bonus!

Obviously you can use any fruit combination you’d like (peach and raspberry would be good), or just one type of fruit. But peach and blueberry go well together. And while the normal crunchy addition would be granola, I couldn’t find any low-fat granola at the grocery store (really, Safeway?). So I used Kashi GoLean Crunch. I think it actually turned out better that way.

I have been looking for old-fashioned parfait dishes — the kind of tall, footed glass you might serve an ice cream sundae or root beer float in. But I haven’t been able to find any. So I improvised with a giant wine glass. Why not?

Peach and blueberry yogurt parfait (serves 1, though measurements may vary slightly depending on size of glass/dish)
3/4 cup plain Greek yogurt
2 tablespoons honey
1 peach
1/2 cup blueberries
1/4 cup granola or similar cereal with crunchy clusters

Mix honey and yogurt together in a small bowl. Dice peach and discard pit. Rinse blueberries.

Place a few blueberries in the bottom of a parfait dish or large wine glass. Cover blueberries with some of the honey-yogurt mixture, then cover yogurt with peaches. Sprinkle some cereal on top of the peaches. Continue layering until you reach the top of the glass.
