Baked sweet potatoes and bananas

When I first saw this recipe on Tyler Florence’s website, I wasn’t sure if it was a recipe for baby food or regular food. He does both. And while I know nothing about babies and their eating habits, I would have to guess this would work as a baby food item. But it also works for grown ups.

Basically you just throw some sweet potatoes in the oven, put some bananas in a half-hour later, scoop out the insides and blend them up. I gave Toby a spoonful and he said it “tastes like candy.”

I don’t know if liquid is supposed to ooze out of the bananas… but it did. I added some water to the finished product (and blended it up again) for a better consistency. And that was it. Seriously.

Now, if you’re not worried about calories/sugar/etc or you want to make this as an alternative to your normal Thanksgiving sweet potatoes, feel free to top it with marshmallows or nuts or some kind of brown sugar-nut-oatmeal mixture. But it is really great as-is (though best right when it’s made). Enjoy!

Baked sweet potatoes and bananas (From Tyler Florence)
3 large or 4 small-ish sweet potatoes
2 large bananas
water, as needed

Preheat the oven to 350 and scrub the sweet potatoes. Place the sweet potatoes on a baking sheet or in a baking dish and bake in heated oven. After the potatoes have baked for 30 minutes, add the bananas (in their skins) to the oven and continue baking potatoes with bananas for 30 more minutes.

Allow to cool slightly, then use a spoon to scoop out insides of sweet potatoes and vegetables. Place in a food processor and process until smooth. Add water as needed for texture. Serve immediately.
