Tropical sunrise smoothie

Well, the diet has been going pretty well, although the exercise portion has been a challenge. It seems the fates have been conspiring against me, but I have managed to swim a little and take a few walk/runs over the bridge near our house.

Anyway, I’ve found the biggest challenge, food-wise, is to get and prepare all the foods ahead of time so I am not caught somewhere without anything appropriate to eat. But smoothies have been a great way to have something tasty in the morning without spending too much time cooking or chopping.

This smoothie was particularly good. The Greek yogurt makes it creamy and provides a bit of protein without added sugar or the chalkiness of protein powder. The banana and pineapple offset the tanginess of the yogurt, so you basically can’t taste it. Plus, it’s a Vitamin C bonanza. Just stick a mini umbrella in there and you’re set.

Tropical sunrise smoothie (Serves 2)
1 cup pineapple
1/2 cup frozen mango
2 bananas
1/2 cup nonfat Greek yogurt
1/2 cup orange juice
Ice

Place fruit, yogurt, juice and a small amount of ice to a blender and blend until smooth. Add additional ice and blend until smoothie is desired texture.
